Chestnut Honey

Chestnut honey comes from natural chestnut groves and is very dark in colour, with shades which, depending on the area of origin, range from dark amber to black; it is produced throughout the Italian peninsula in the mountainous and hilly areas, where chestnut trees grow. This honey, having a higher content of fructose rather than glucose, tends to remain liquid with delayed crystallization; its aroma is strong and intense, while the flavor is not exactly sweet, in fact it has a particular taste, pleasantly bitter, with a slightly bitter and persistent aftertaste that leaves the mouth dry. Thanks to its strong and penetrating scent, with a pleasant tannic note, it meets the taste of many admirers.

Uses and combinations
Due to its particular taste, chestnut honey is considered unsuitable as a sweetener, while it goes perfectly with cheeses, preferably not excessively spicy. For example, it is considered excellent for mature goat and mixed goat cheeses, or even for some less mature or vaccine cheeses, such as Raschera Dop, Puzzone di Moena, Caprino Ossolano, but also other types such as Caciocavallo, Parmigiano Reggiano and Tuscan Caciotta. Chestnut honey is also indicated in some recipes to flavor meats. like some roast dishes.

Beneficial properties
Generally, among the characteristics of honey is that of being slightly laxative, while chestnut honey has the opposite effect, as well as having antispasmodic properties.
