It is produced in the areas of central-southern Italy, on the Tyrrhenian coast and on the islands, particularly in Sardinia. Eucalyptus honey is medium aromatic, with a brown color and a strong and persistent flavour, with a not too sweet taste and a slightly salty aftertaste.
Uses and combinations
Due to its particular aroma it is not suitable as a sweetener, however it lends itself well to enriching raw salad dressings or in butter-based sauces to season vegetables; it also goes well with tasty cheeses, such as Parmigiano Reggiano, or aged Ragusano and pecorino.
Beneficial properties
Eucalyptus honey has the virtue of being antiseptic of the respiratory tract, which is why it is widely used during the winter season to treat colds.
