Orange Honey

Citrus honey is native to southern Italy and the larger islands. It is a uni-floral honey among the most appreciated for its particular scent and fragrance derived from the flowers of the citrus fruits from which it is produced, mainly bergamot, lemon, orange, citron and mandarin. It has the characteristic of crystallising spontaneously a few months after harvesting and then takes on a colour ranging from white to light beige, with a sandy consistency and rather large crystals. Its fragrance is distinct with a medium intense, fruity and floral flavour with a pleasantly acidic note. Among citrus honeys, a special note should be made of orange blossom honey because it is certainly the most fragrant of all, just like the small white flowers on which the bees rest to take the nectar. Orange blossom honey has a sweet taste and is rich in glucose, which is why it tends to become compact and crystallise at slightly cooler temperatures.

Uses and combinations
Due to its special flavour, citrus honey is suitable to accompany typical southern Italian cheeses such as mozzarella, scamorza and caciocavallo. It is also considered perfect for a somewhat unusual combination, namely as an accompaniment to some fish dishes, both raw and cooked. Finally, it is used as a sweetener for hot drinks such as chamomile tea and herbal teas, in plain yoghurt, in desserts (especially fried ones) and to decorate whipped cream. It is perfect for breakfast milk and as a honey spread on bread or rusks.

Beneficial properties
Some experts recommend citrus honey as a mild sedative for the nervous system. Its virtues include that of being considered a sedative of the nervous system.
