Lavender honey

Lavender honey is a specialty that is produced mainly in France, where such plantations for the perfume industry abound. Spain also partly produces this type of honey, while in Italy it is produced only in Sardinia, from the wild lavender plant. It has a very intense fragrant aroma reminiscent of aromatic plants, with a color ranging from straw yellow to amber, while its flavor is very particular, with a very persistent aftertaste that could recall ripe figs and almonds.

Uses and combinations
Lavender honey, due to its particular taste, can be used above all with important cheeses such as Montasio, Sicilian Pecorino and Sardo Pecorino.

Beneficial properties
Among the general characteristics of honey is that of being laxative, while lavender honey has the opposite effect, and is therefore considered useful for stopping diarrhea. It is also an analgesic and is indicated as a respiratory antiseptic.
